Guest Post: Apple & Carrot Slaw Salad

Hi my name is Censie and I am the author of a popular lifestyle blog based out of Denver Colorado called Building Our Story.  I am honored to be sharing Laura’s space today and cannot wait to share with you all a great summer salad recipe that we love to make in our home.  It is simple, yummy and EASY!  The best kind of recipe right?  



I am always looking for great side dishes to pair with my lunches or dinners and I recently found one of my new favorites!  This salad is perfect to side with a sandwich at work or even a steak dinner!  Oh and it literally takes 5 minutes to prepare!  Sign me up!!

Apple and Carrot Slaw Salad

Ingredients:

2 large apples (any kind) cut into matchsticks
3 uncooked carrots, cut into matchsticks
1 TBSP of Olive Oil
1 1/2 TBSP fresh lemon juice
1/4 cup green onions chopped
1 tsp sugar

2 oz feta cheese, crumbled
salt and pepper to taste

Directions:

1.  Please the apple matchsticks in a large bowl and toss with the lemon juice.  

2.  Add carrots, onions, oil, sugar, salt, pepper, and feta cheese; toss to mix thoroughly.

  

3.  Serve chilled.  I let mine chill in refrigerator for at 30 minutes before serving.

For you Weight Watcher members – 1 serving yields 3/4 cup of the salad.

So good and totally gives you that sweet and crunchy treat!!
