Hyped Up Biscuits & Gravy #Easy #Recipe

I am late posting this morning because I literally could not wait to eat my leftovers from last night.  I am not sure where this has been all my life but if you do nothing else in your life, you MUST try these amazing 7UP Yogurt Hyped Up Biscuits & Gravy.

Yogurt Biscuits & Gravy, Hyped up Biscuits and gravy, Chobani Biscuts, 7Up yogurt biscuits.

Our family loves eating breakfast for dinner, however, it is dinner so we might as well add a bit of flavor to it!  I knew going into this adventure that this potentially could be full of calories and not the healthiest so I made sure to purchase ingredients that were on the healthier end of some comfort food cooking.

  • 1/2 cup of 7UP
  • 1/2 cup of Chobani® Non-Fat Greek Yogurt (plain)
  • 1/2 a stick of salted butter
  • 2 cups of Biscuit mix (Bisquick works fine)
  • Eggs
  • Sausage and/or bacon
  • Gravy Mix
  • Low Fat Milk
Now I cannot promise that these ingredients are super healthy, but I know that I made a healthier decision for our family by using low fat milk AND Chobani® yogurt instead of sour cream. 

To make the biscuits:

  1. Melt the butter in the bottom of your baking dish (mine is 8x10)
  2. Mix the 7UP, Biscuit mix and yogurt in a separate larger bowl.
  3. Using a spatula, spread the dough mixture over the butter until its thickness is even
  4. Back at 450 degrees for 12-15 minutes

Hype it up!
You could just eat the biscuits, or you can hype them up!

  1. While the biscuits are baking, fry up some sausage, bacon (sliced into pieces) and baby portobello mushrooms.
  2. In another pan prepare your gravy mix as directed on the label.
  3. Make eggs if you would like some.
  4. Prepare your amazing HYPED up  Biscuits and gravy
  • Place the biscuits on a plate
  • Pour your gravy over them
  • Sprinkle your meat mixture on top of that
  • Add cheese if you want

Eat!  You will love me for this one. 

So many people wonder why I decided to use yogurt instead.  Well honestly my amazing neighbor recommended it and I tried it.  However, yogurt is a healthy, probiotic option and one that I really need to be more aware of.  While browsing the yogurt isle and the kids isles I came across the Chobani Tots and Kids products and snagged a couple boxes.

My kids tried these last night and ate an entire box.  Yup of Mango and Spinach!  Two produce items that they would never consider mixed in with delicious yogurt and they gulped them down.  It was so quick I could not even get a photo.  With 0 preservatives and 0 artificial colors and flavors, I will definitely be purchasing these again!

Yogurt is great as a snack or to mix in with various recipes.  I know that I will be using it as a substitute from now on.  It was the best decision I have made in a long time and I know that it was healthier for us too.

Transformer Roller Skating Party {Recap}

A couple weekends ago we gathered our friends and close family and had a roller skating birthday party for my favorite 5 year old.  He had asked to have the party at our families roller skating rink back in January so we had been practicing and preparing for him to have a good time with his friends. The party was a success so I thought I would share our personal photos and show you How to Create a perfect Transformers Party!

A party is boring without the decor!  I have decided that my Silhouette Machine is pretty much my go to party making device.  SAVED SO MUCH MONEY and created everything from his shirt to his centerpieces.

For his party table I ordered the Transformers table cloths, plates, cups, masks and napkins off of Oriental Trading company and snagged free shipping plus 20% off.  Get those emails folks you can really save!  Seating for 24 people for less than $20.00!

My kids always have a special shirt to wear.  Sometimes I make it, other times I pay.  I really wanted to try out my Silhouette Machines dark heat transfer setting and it worked perfectly.  I created the image in photoshop, then imported it into my silhouette software and traced it.  I set the registration marks, made sure to keep the image normal (not reversed) and printed it on our home computer.  Then I inserted the heat transfer print into my silhouette and it cut it right out!  Ironed it on a shirt and BOOM perfection!

We were at a skating rink, people would be getting thirsty and want some snacks.  We had pizza, lemonade and cake too, but I thought this little refueling station would be perfect for our guests!  It was a HIT!  We got water from the rink, I made stickers with my Silhouette and the "refueling station" sign as well and decorated the water bottles.  My best friend and I also spent the weekend before, MAKING all those chocolate robot suckers.  Folks, I should have taken photos of that day, you would have cracked up.

I knew that I wanted my table to stick out and really be themed.  There was 3 other parties that day and I wanted my guests to know where to go.  I made centerpieces (again using my Silhouette) and then set the table up.  Each kid also had either an Optimus Prime or Bumblebee mask.  The idea would be that they could "Transform & Roll Out"

I made sure to include little signs giving them a hint to Transform!!!

The two most expensive parts of the party were the balloons and the cake.  BOTH of which I purchased with coupons.  We snagged the cake for $25.00 and the balloons for $10.00!  Now of course we did get to use the skating rink for free.  I love saving money!

We LOVE Target cakes.  Their whipped frosting is heavenly and although I can easily bake and decorate a cake, I just did not have the time and the boy REALLY wanted the toys on this cake.

Party favor bags are fun, I went completely transformer themed.  Inside were coloring sheets, pencils, tattoos, a chocolate robot sucker and a paddle ball.  I snagged these bags and a couple of the items inside in the Target clearance bins and hardly paid a think for them!

Of course there was skating...of course the pictures are blurry because they were moving, but the kids all had a blast!  Oh and look there is my IN REAL LIFE blogging BFF Censie from Building Our Story!

Oh and party people and a NEW BIKE and fun and a sassy, sassy, princess who just couldn't stand the fact that life is not all about her. 

Hope you enjoyed celebrating with us!  We had a great time, great friends and family and I really enjoyed making his party so personalized.  I think I have a new hobby! 

I managed to throw this party for a total of $150.00, had we needed to rent the rink it would have been right under $300, which for 30 guests is pretty awesome!

#UltraHug and my Hospice Nomination

It is no secret that our family has been through too many illnesses ending in a stay in hospice and the release of our loved ones spirits into the heavens.  We do it so much that I think I am pretty numb to the whole situation.  Huggies contacted me and asked us to share our #UltraHug selfies and nominate a community that we feel deserves a $2000 grant.  I am choosing Halcyon Hospice here in Denver as they have been our rock through some of the toughest losses we could ever imagine.

I remember the first loss very clearly and it still touches me, but since then I have experienced the loss of a close loved one more times than one could even imagine.   In those times we hug, we love and we lean on our family to get us through.  Hospice is something that no family wants to have but all families appreciate.  They are there to prep the family and most importantly give care to the patient with respect and dignity.  Most of the time we have done a home hospice situation where the nurses visit and check in but meds and main medical care are taken care of by the family.  Halcyon was my Mother-in-laws amazing care team and in the 3 months she was with them they helped her cope with saying goodbye but still allowed her the freedom to live her life.  They were there for her passing and were crying along with us.  They were at her funeral services and were just the best ever. I truly hope that they win this amazing $2000.00 gift as they give so much of themselves.

We have just began exploring the potty training sector with our tiny peanut.  Hand washing is her favorite part of the process and was made even more fun with this watermelon scented hand wash. Time for myself

Life gets so busy, so overwhelming and so mundane; that is, if you allow it.  Lately I have allowed that.  I find myself exhausted and sometimes completely unable to focus on things that are necessary...like you know homework, and on occasion this:

Those two perfect humans that I helped to create, have noticed that mommy is SO tired and that I never stop moving.

I made a conscious effort last week (which I have to do periodically), to re-center myself.  Lately I have needed to do this more than normal.  I am not sure if it is due to my current schedule or if it is just end of the school year exhaustion weighing on me.  Probably all of the above.  I made a couple goals to get me through to summer, and I thought I would share them here to help keep myself more accountable.

1. Wake up on my first alarm.  This essentially would make my mornings go much smoother, which would make my days feel less rushed.  I was so good about this last semester and I felt better then too.

2. Continue to PUT DOWN THE PHONE.  I was an addict, I lived for my cell phone and Facebook and Instagram and Twitter and well Social Media.  It is sort of the devil in many ways.  In the last 6 months I have really worked to put the phone down and have genuine conversations and quality time with my kids.  This energizes me and I want to continue to put it down EVEN more!

3. Each Night Take 1 Hour to indulge.  Maybe in a snack or some craptacular TV or social media time that is not blog related.  Just indulge.  I give of myself a lot, to my husband, my kids, my students and my colleagues and I forget that I need to give TO myself.  

4. Eat better.  I am really trying to eat cleaner and to be more aware of what I am putting into my body and how I feel.  I got a wake up call last year when my quarterly diabetic blood work came back elevated for 2 draws in a row.  That hasn't happened since I was first diagnosed, so I am trying.  I am not limiting foods yet, just trying to make better decisions and snack healthier.  I love me a good snack.  I will say my lunches at work for almost a month have been super healthy and we are working on doing that for dinners at home as well.  

5. Stop Procrastinating.  I am the most epic procrastinator of all time.  Oh I have a 9 page paper due in an hour...time to crank it out with some BS in that.  My students need a test graded...I will do those right before class starts.  I procrastinate in a great way though.  I clean and I spend time making memories with my kids.  So I sit and justify my lack of motivation for school and sometimes work (not often though) with my motivation to keep a clean home and a happy family.  Life has its trade offs, but honestly I need to not procrastinate and put that extra pressure on myself.

I think 5 goals for 5 weeks and beyond are a good starting point.  It is out there now, so I would love it if you could help keep me accountable!

Toddler Bed Transition

A few weeks ago, my beautiful, amazing and acrobatic daughter found her way out of her gorgeous crib and onto her changing table.  Thankfully she was smart enough to not stand on it and just yell for her mama, but I freaked out when I saw that tiny baby sitting on that tall changing table that was NOT secured to the wall.  It was clearly time to transition to the toddler bed.

This is not my first toddler bed transition rodeo and I knew that I wanted to attempt this one slightly different than my first.  This can be a hard transition for your toddler as they are now not confined to their crib but free to roam and play, it can also be scary for them because now they may not feel as safe and secure when they are sleeping.  It can adjust their sleep patterns and yours too.  Through our past experience, I came up with some great ideas that I think really helped our transition into the toddler bed.

  • Include your toddler in changing his/her room into a "big kid room".  We did not do that with my son.  He literally fell asleep in our bed one afternoon and we converted his bed, rearranged all his toys and dressers and then tried to put him in his room that night.  That was a terrible idea.  With our daughter, she was able to help me move toys around and decide how she wanted some things (with guidance).  We started by moving some of her toys and then a dresser and nightstand.  The bed was the last thing we changed.

  • Ask your toddler if they want a big kid bed.  This should have been a no brainer.  My son never climbed out of his crib, he just slept there and would have for eternity I think.  I just was ready for that toddler transition and wanted to start potty training.  The poor kid had no choice. I made SURE to ask our daughter if she wanted to try her big girl bed and let her know that if she didn't like it we would put it back to a crib.  She happily agreed!

  • Prepare to slightly change your bedtime routine.  Our normal routine is dinner, baths, books, snuggles, bed.  It has been that way with both kids.  I thought with our son that we could continue that.  I realized quickly that it was not that simple.  He needed more security and comfort.  I gave that time to him and it made the transition easier.  With our daughter I immediately made sure to talk with her after her bath and dim the lights in her room before the book.  I extended our "snuggle" time a bit longer and allowed her fall asleep in my arms a couple times.  I made sure to tell her that mommy is only a few steps away.  Her sleep transition was easier for this. 

I can tell you that from our first experience to this last one that my approach was much better and that my kid felt much calmer and content.  We both are sleeping great (when I have time to sleep) and she loves her big girl bed!  I think giving kids a little choice in the matter is a good idea in this case and allows them to be a part of something big!


On a side note.  Please make sure that when you allow your toddler the freedom to move around their room and potentially climb on items that you secure all large pieces of furniture to a stud in the wall and baby proof.  Kids are curious and dressers fall easily.

Happy Birthday Son!

Happy Birthday Boogie!  

Today you are a BIG FROG!  In our family that is a big deal.  You're 5, you're no longer a baby, toddler or preschooler.  

These past 5 years have been the best; you (and your sister) make them even better.  You are truly a gift from God and I am so lucky that you chose me to be your mommy.  

You are so sweet but so sneaky at the same time. It's one of those character traits that's unique to little boys.  You like to sneak down to give extra "loves" to me and daddy and the dogs.  You sneak the iPad to play learning games.  You sneak candy...just like daddy!  It's a character trait that both drives me crazy and also makes me love you even more.   

You have grown tremendously this past year.  I swear you skipped over 4T clothes.  I am constantly buying new clothes to keep up with your growing body.  I think we have officially moved into the little boys section and although I am so glad you are healthy and growing it saddens me a bit to know that you are not a baby anymore.  However, you will always be my baby!

You love all things "boy"!  Camping, fishing, motorcycles, ninja turtles and power rangers and you can make a machine gun sound that is amazing...but drives your daddy nuts.  You live for being outside but are also a complete homebody.  When we asked you what you wanted to do for your birthday today, you told us that you just wanted to stay home.  We had to offer up options that appealed to you before you decided that you wanted to go out.  I think if you could stay home in your PJ's and watch movies and play all day you would. 

You love school and are very smart.  I am always impressed with how much you are able to read and your ability to add and subtract with ease.  I hope that it always stays that way.  Your school next year will challenge you but I pray it also inspires you to be amazing...because you are.  This next year will be a big change and transition for our family but one that will shape you and I am excited to see where we go from here.

Little man you are my everything, my world and a piece of me.  We share a bond that I could never share with another.  I love you to infinity and beyond, forever and a day and NOTHING will change.

Last night was a milestone in our household.  My big boy had Kindergarten orientation!  It was awesome and it solidified my reason for sending him to a school that is 30 minutes from our house (only 10 from my work though)!  My husband was convinced that I made the right choice and our little guy adored his new school, teacher and was finally excited!

Orientation began with some introductions and expectations from students and parents.  The principal and the teacher both spoke and explained that they are a core knowledge school, which basically means that they teach common core but go into more depth.  The class sizes are small (no more than 20) and the teacher is great!

Our little guy will be going to this school with a few of his preschool classmates that also made it in! We are elated for him to have a fresh start but with some good friends and he is too!

My favorite part is that they school is rural and small.  It is a K-8 and there is only 1 teacher per grade.  The parents that have kids in this school already LOVE IT and the reviews online follow that same sentiment.  It is a family and is exactly what I was looking for with my children.  I went to a school like this and it was amazing.  I cannot wait to see how my little guy falls in love with learning!

Our little guy even went straight up to his teacher at the end of the tour and shook her hand and gave his FULL name.  He was very proud to introduce himself and really excited to start the year!

Then there was this.  What a beautiful ending to a day representing a new beginning in our lives.
