Low Carb Zucchini Chicken Alfredo #VivaBertolli [ad]


Six weeks ago I got test results that changed my life.  I did not have my diabetes under control and carbohydrates and sugar were to blame.  One of the items that I miss the most is pasta and in particular Fettuccini Alfredo with Bertolli sauce.  I create a low carb option that is just as good, if not better!

I have to admit, I was a skeptic in thinking that I would be able to eat foods with so many vegetables and zucchini is not a huge favorite of mine, however, after tonight I will definitely be adding this to my meal plan!  The Bertolli Alfredo sauce really made this meal scrumptious.  Its rich, creamy flavor with a touch of Tuscany was just what I was craving and at only 2 carbohydrates for 1/4 cup, it was exactly in my low carb range. 

Ingredients: (Serves 2)
  • 2 medium zucchini's
  • 1/4 cup Bertolli Alfredo Sauce
  • 1 jar of button mushrooms (halved)
  • 4 oz of ready to eat chicken
  • 1 TBS olive oil
  • 1 tsp butter

Directions:
  1.  Using a vegetable spiral slicer, spiralize the zucchini's.  Make sure to cut the ends off and I found it easier to cut mine in half.  
  2. In a medium sauce pan place your spiral zucchini and olive oil and cook on medium for 3-5 minutes. 
  3. Add 1/8 cup of water to the zucchini and let it cook down. 
  4. Drain the zucchini pasta and then place back in the pan. 
  5. Use the microwave to head up your chicken pieces and half the button mushrooms.
  6. Place the chicken and the mushrooms in the sauce pan and add the butter to the mushrooms.  Allow to melt.
  7. Add Bertolli Alfredo Sauce and mix together. Serve & Enjoy!

1 serving of this meal is 5-6 carbs depending on how many mushrooms you decide to eat.  It really hits the spot when you are really wanting some pasta but are trying to stay on plan.  I am very happy to still be able to enjoy quality sauces that are low carb and put together a dinner that is fast, healthy and that everyone loves.  We all really enjoyed this and I am excited for tomorrows leftovers!
